This recipe has been a big hit around our house for the past two decades. My family has grown up with it and now both of my daughters are making it for their families. I hope it is as popular with your family!

Smoking Tips

What is the first rule that trumps all other rules at culinary school? Above all else – serve hot food “hot” and cold food “cold”. Nobody wants both their soup and their salad lukewarm. Always an important rule for any kitchen. In this case, it means chilled lettuce. Leaving the lettuce on the countertop for a bit while you do something else is not helpful. What I prefer to do well in advance is prepare and chop the lettuce, bag it in a zip lock and stash it in the fridge until right before service.

One final note about preparing the garlic. Have you found a good garlic press? You will need one for this recipe. This one is the best!

  • 1 head – fresh Romaine lettuce, chopped

  • 1 cup – Hellmann’s/Best Foods regular mayonnaise

  • 1 Tbsp – Dijon Mustard

  • 1 Tbsp – Worcestershire Sauce

  • 2 – Cloves of fresh garlic, pressed or finely chopped

  • 2/3 cup – Grated Parmesan cheese

  • 1 large lemon – juiced

  • Black pepper to taste, freshly ground, coarse

  • Salt to taste

Directions

  • Prepare chicken.

  • Prepare Dressing.
    In a 4 cup bowl add the mayonnaise and most of the lemon juice keeping a bit of the lemon juice in reserve. Add the pepper, Worcestershire sauce, mustard, and garlic and blend thoroughly with a wire whip. Add the Parmesan cheese and blend. At this point taste the dressing on a piece of romaine lettuce to check the flavor balance and viscosity. Use the lemon juice if too thick. Use a bit more mayonnaise or cheese if too thin. Please keep in mind the dressing will thicken in the refrigerator as it cools down. Thanks to the vinegar in the mayonnaise and the acid in the lemon juice, the shelf life refrigerated will be approximately 2 weeks.smoked chicken caesar salad
  • Serve.
    Place the chilled lettuce in a large stainless steel bowl and add enough dressing to lightly coat the lettuce. In a smaller bowl, add the chicken and enough dressing to lightly coat the chicken. You may prefer to warm the chicken before dressing it. Plate the dressed lettuce, top with the chicken, serve and enjoy.
